Cookie bars have easily become one of my favorite recipes to make. Not only are they a thicker, deliciously chewy version of a traditional cookie, but decorating them is so easy! These Cadbury Egg Cookie Bars are the perfect dessert for your Easter or springtime celebration and come together super quick.
RECIPE TIPS:
- Baking pan: I HIGHLY suggest you use a metal baking pan. Metal pans cook baked goods more evenly than a glass pan and are super easy to transport the bars in (the one I tagged comes with a lid which is super convenient!)
- Frosting: These cookie bars are delicious without the frosting so if you don’t have the time or ingredients, no worries! I am a total frosting fanatic and will put it on anything and everything, plus it makes them so pretty!
- How to get the robin’s egg effect: This is super easy to achieve! Mix cocoa powder with warm water and use a pastry brush or paint brush, dip it in and flick the cocoa mixture onto the frosting. It’s a beautiful effect and will dry after a few minutes.
- Chocolate chips: For this recipe I prefer to use milk chocolate or semi-sweet, but you can use whatever is in your pantry!
- How to make them soft and chewy: Like most of my cookie recipes, these bars are soft and chewy. In order to make these they stay soft make sure you don’t skip the corn starch in the recipe! Corn starch helps to create a really tender cookie and that’s what we want! You also want to pay close attention to your baking time. I baked mine for 22 minutes on the dot. The top and outside edge will be nice and golden brown but the inside will be fudgy. Pull them from the oven and let them completely cool in the pan. This will produce the most delicious soft and chewy cookie bars 🙂

Cadbury Egg Cookie Bars
These Cadbury Egg Bars are a chewy chocolate chip lover's dream! Dense and fudgey cookie bars are dotted with chocolate chips and Cadbury Eggs, and topped with the prettiest robin's egg frosting.
Ingredients
For the cookie bars:
- ¾ cup butter melted. I prefer salted but you can use unsalted if you prefer!
- 1 cup light brown sugar
- ⅓ cup granulated sugar
- 1 tbsp vanilla extract
- 2 eggs room temperature
- 2 cups all-purpose flour
- 1 tbsp corn starch
- ½ tsp baking soda
- ½ tsp salt
- ⅔ cup semi-sweet chocolate chips
- 1 cup roughly chopped Cadbury Eggs
For the frosting:
- ¾ cup butter room temperature. I prefer salted but you can use unsalted if you prefer!
- 3-4 cups powdered sugar
- 1 tsp vanilla extract
- 2-3 tbsp milk room temperature
- ¼ tsp salt
- blue food dye
For garnish:
- 1 tbsp cocoa powder
- 1 tbsp warm water
- 1 cup roughly chopped Cadbury Eggs
Instructions
For the cookie bars:
- Preheat the oven to 350°. Grease and line a metal 9×13 pan with parchment paper. In the bowl of a stand mixer combine the melted butter, brown and granulated sugar. Mix until combined. Add in vanilla and eggs, and mix until incorporated.
- While the mixer is on low add in the flour, salt, corn starch and baking soda. Mix until just combined. Fold in the chocolate chips and Cadbury Eggs. Scoop batter into the prepared pan and use a spatula to make sure the dough is evenly spread out. Bake or 22-25 minutes, or until the edges are golden brown. Remove from the oven and allow to cool completely before frosting.
For the frosting:
- In the bowl of a stand mixer beat together the butter and powdered sugar for 2 minutes until smooth. Add in the vanilla, salt and 2 tablespoons of milk and beat until smooth. Add in additional milk if necessary to get the consistency you prefer. Once smooth, if you're dying the frosting add in 1-2 drops of blue food coloring. Mix until evenly distributed.
For the garnish:
- Make this right before frosting the cookie bars. In a small bowl combine warm water and cocoa powder. Whisk until combined and set aside until needed.
To decorate:
- Place the cookie bars on a surface you don't mind cleaning (the speckling can be a little messy!) Once the cookie bars are completely cool, spread the frosting evenly on top. Dip the tip of a dry pastry brush into the water and cocoa mixture and shake off any excess. Pull the bristles back, point at the cookie bars and slowly release. Repeat as many times as you' like to create the pattern. Sprinkle the roughly chopped Cadbury eggs on top. Slice and serve!

You can bake them in a glass pan but a metal pan typically bakes them more evenly. Watch the bake time as you may have to adjust by adding a few minutes!

If these aren’t being eaten right away can you refrigerate them? I feel the icing will soften left out and I feel would be easier to cut if chilled but maybe I’m wrong. Tell me what you do please 🙂
