We are back again with another variation of my original Brown Butter Rice Krispie Treats and let me tell you, they might be one of my favorite versions yet! The recipe is super similar but I substituted the Rice Krispies for Cinnamon Toast Crunch and added a dash of cinnamon to the white chocolate topping. It tastes JUST like when you’re eating the cereal and the milk starts to taste like cinnamon. They are so good and I love a no bake recipe.
RECIPE TIPS:
- One easy mistake to make with this recipe is to crush down the mixture when adding it to the pan. You want to gently stretch it into the pan and lightly pat it level with a spatula or your hands. Worried about the mixture sticking to your hands? I have a tip for you: before you touch the treats, run a few drops of water over your hands and rub them together. The water will prevent the marshmallow mixture from sticking to your hands and allow you to easily manipulate the treats without having to crush them down!
- This is made in a 13×9 in pan. I like this one since you can decorate in the pan, put the lid on and take them to whatever event!
- I like to drizzle these with melted white chocolate and a little cinnamon. Feel free to mix this up!

Cinnamon Toast Crunch Marshmallow Treats
These Cinnamon Toast Crunch Marshmallow Treats are such a fun twist on the classic Rice Krispie Treats! The brown butter combined with the white chocolate and cinnamon topping tastes just like an incredible bowl of the cereal after the milk tastes like cinnamon. They're so tasty and come together in 15 minutes!
Ingredients
For the Cinnamon Toast Crunch Marshmallow Treats:
- 1 cup salted butter
- 20 oz mini marshmallows
- 2 tsp vanilla extract
- ½ tsp salt
- 10 cups Cinnamon Toast Crunch
For the topping:
- 4 oz white baking chocolate
- ¼ tsp ground cinnamon
Instructions
- Line a 13×9 inch pan with parchment paper. Lightly mist with nonstick cooking spray and set aside. In a large pot melt your butter over medium high heat. Once melted, continually stir until the butter just begins to brown. The butter should foam up twice and then begin to give off almost a nutty aroma. Immediately remove from heat so the butter does not burn.
- Stir in the two teaspoons of vanilla extract. The hot mixture will bubble up, so continue to stir an additional thirty seconds until the sizzling subsides. Add in salt.
- Add in half of your marshmallows and mix until almost completely melted before adding the remaining. If you need to you can return the pan to the burner (turned off) that you melted the butter on. Using a rubber spatula, stir until all of the marshmallows are mostly melted. Add in the Cinnamon Toast Crunch, 2 cups at a time, and lightly stir until combined. Continue to add the Cinnamon Toast Crunch until everything is evenly combined. If your spatula is sticking, spray with nonstick cooking spray!
- Pour the mixture into the prepared pan. Lightly wet your hands and gently push into the pan to the edges. You don't want to crush it, so really be gentle with it!
- Break up the white chocolate and add to a heat proof bowl. Microwave for 30 seconds, stir and repeat until completely melted. Once it's ready, set aside for 3 minutes to chill down to room temperature. Add in the ground cinnamon and stir to combine. Using a spoon, drizzle white chocolate onto the treat. Let the chocolate harden and enjoy!

Vanilla extract really enhances the flavor of the marshmallow, and with how sweet the marshmallows are the salt helps to balance out the flavor!
