As some of you know, I am a partner with Nestle Toll House! Each month I’m sent one box of goodies to feature in a recipe. This month I received four different bags of chocolate morsels, including these Sea Salt Caramel Baking Truffles! These cookies were so fun to bake up, and the morsels are delicious. I paired them with my other favorite Nestle product, Milk Chocolate Morsels, and made these incredible Salted Caramel Mocha Cookies!
These cookies are dense, salted caramel mocha deliciousness! They almost emulate a brownie cookie, but the caramel and seat salt topping really take these over the edge. I was inspired by the holidays and some of my favorite coffee drinks so I added instant espresso powder to boost the chocolate and coffee flavor.
If you don’t have instant espresso powder you can omit it, but these really do taste better with it! Do not substitute normal espresso powder or the cookies will turn out gritty and bitter.

Salted Caramel Mocha Cookies
Ingredients
- ¾ cup salted butter, melted you can use unsalted butter as well!
- 2 tsp vanilla extract
- ½ cup cocoa powder
- 1 cup granulated sugar
- ¼ cup light brown sugar
- 1 egg
- 1 ½ tsp instant espresso powder
- 1 ½ cups all purpose flour
- 1 tsp baking powder
- ½ tsp kosher salt
- ½ cup Nestle Milk Chocolate Chips
- ½ cup Nestle Sea Salt Caramel Baking Truffles
For Garnish:
- 2 tbsp flaky sea salt for garnish
Instructions
- Add the butter, vanilla, cocoa, and both granulated and light brown sugar to the bowl of a stand mixer. Stir on medium speed until combined, about 1 minute. Add the egg, instant espresso powder, flour, salt and baking powder to the mixer. Stir on low until it all comes together, about 1 minute.
- Remove the bowl from the mixer and add the chocolate chips and cup sea salt caramel baking truffles. Use a spatula to stir by hand.
- Using a small ice scream scoop, scoop the dough onto a baking sheet lined with parchment paper. Chill for 15 minutes while the oven preheats to 350°.
- Once the oven has preheated, evenly space the cookies on a baking sheet and cook for 9-10 minutes, or until the edges are set and center is still soft. Remove from the oven and let cool on the cookie sheet for 2 minutes. Remove and add to a cookie rack, and sprinkle with flaky sea salt!
