We love a good breakfast recipe in this house, especially one I can make and then eat the rest of the week! Now if you’re from up north like me (Pittsburgh) you may be thinking “What the heck is a kolache??” No worries, I had no idea until I moved to Texas but believe me, you’re missing out! Kolaches are traditionally a Czech pastry filled with either a sweet or savory filling. A lot of times they are filled with sausage, but my favorites are the ones with scrambled eggs and other fillings in them. When I had my first one I thought how could I have gone my whole life without eating this soft pillowy breakfast roll stuffed to the brim with classic breakfast food?! I’m not claiming these are traditional kolaches, but my easy make at home version that is going to be in your weekly breakfast rotation 🙂
This recipe uses store bought frozen raw dinner rolls. I found my bag of 36 frozen dinner rolls for under $6, and for this recipe, I make 12 at a time. I add a large spoonful of the egg mixture and half a slice of cheese per dough ball. You may be tempted to add more but you want to make sure you leave a little dough around the edges so you can easily close them so they won’t explode in the oven! If you’d like to make them the next day, return to the fridge covered in the saran wrap and remove 1 hour before baking to allow to come to room temperature.
If you’re looking for a way to up your breakfast game and make it more fun (and delicious) then this recipe is for you! If you end up trying it please leave a rating and review below 🙂
Sausage Egg & Cheese Kolaches
Ingredients
- 12 raw frozen dinner rolls I use Rhodes!
- fully cooked breakfast sausage, defrosted I use about 6 Jimmy Dean's and cut them into smaller pieces
- 8 eggs
- ¼ cup heavy cream or milk
- ½ tsp onion powder optional
- ½ tsp salt
- ¼ tsp pepper
- 6 slices cheddar cheese I used American cheese but you can use any kind that melts!
- ¼ cup everything bagel seasoning this is optional, you can also add any other topping you'd like
Instructions
- Line a baking sheet with parchment paper and evenly space 12 of the frozen dinner rolls about 1 inch apart. Gently cover with Saran Wrap and let sit at room temperature for 20 minutes, or until they become soft enough to handle.
For the eggs:
- In a medium sized bowl whisk together eggs, heavy cream, onion powder, salt & pepper until light in color, about 30 seconds. Cook on the stove until just cooked. Mix in the defrosted breakfast sausage. Don't overcook since they will be baking in the oven as well!
To assemble:
- Once the rolls are soft, spray hands lightly with nonstick and press and stretch the dough into about 3 -inch circles. Add half of 1 slice of cheese to the dough then scoop about 2 tablespoons of the egg mixture into the center. Make sure you leave about ¼ inch of dough with none of the cheese or egg mixture on so you can seal it. pull the edges up together and pinch closed. If the dough isn't sealing, dip your finger into the some water and wet the edges of the dough before pulling the edges together.
- Dip the tops of the rolls into the everything bagel seasoning then place on the prepared baking sheet, seasoning side up. Gently cover with saran wrap that you sprayed with nonstick cooking spray to make sure it doesn't stick to the dough. Let them rise for 30 minutes while the oven preheats to 350°
- After the 30 minutes, space dough balls approximately 2 inches apart on a baking sheet lined with parchment paper or sprayed with nonstick cooking spray. Bake according to the package, usually 15-17 minutes. Remove from the oven and let cool for 10 minutes before eating. Enjoy!
