If you’ve visited my blog before you know I love sharing some homemade version of Rice Krispie Treats basically every few weeks. The reason I love these so much is because growing up they were my absolute favorite dessert and since we were never allowed to have treats, I set out to make a homemade version. These Cocoa Krispie Treats are perfect for a bit of chocolate but nothing over powering. You can use whatever flavor chocolate you prefer and drizzle or tip them to decorate!
RECIPE TIPS:
- One easy mistake to make with this recipe is to crush down the mixture when adding it to the pan. You want to gently stretch it into the pan and lightly pat it level with a spatula or your hands.
- To help with sticking I use a silicone or rubber spatula and spray it with nonstick cooking spray! When you’re mixing in the Cocoa Krispies to the marshmallows it will help to keep them from sticking everywhere.
- Worried about the mixture sticking to your hands? I have a tip for you: before you touch the Rice Krispies, run a few drops of water over your hands and rub them together. The water will prevent the marshmallow mixture from sticking to your hands and allow you to easily manipulate the treats without having to crush them down!
- This is made in a 9×13 pan. I like to use one with a lid (like this one) so it’s easy to pack up and take to a party or pot luck!
- Do not cook the marshmallows on the stove! You want them to melt but if you keep them over heat they will break down and become a thin sugar goo that doesn’t have that stretchy marshmallow quality. The marshmallows do not need to completely melt, just mostly!

Cocoa Krispie Treats
These Cocoa Krispie Treats are a bakery style take on the classic childhood treat. These require no baking and come together in 15 minutes!
Ingredients
For the treats:
- 1 cup salted butter
- 20 oz mini marshmallows
- 2 tsp vanilla extract
- 10 cups Cocoa Krispies
- ½ cup mini chocolate chips
For the garnish:
- 1 cup chocolate chips melted
- ½ cup mini chocolate chips
Instructions
- Line a 9×13 pan with parchment paper. Lightly mist with nonstick cooking spray and set aside. In a large pot melt your butter. Once melted, continually stir until the butter just begins to brown. The butter should foam up twice and then begin to give off almost a nutty aroma. Immediately remove from heat so the butter does not burn.
- Immediately stir in the two teaspoons of vanilla extract. The hot mixture will bubble up, so continue to stir an additional thirty seconds until the sizzling subsides.
- Add in one bag or half of your marshmallows and mix until almost completely melted before adding the remaining. Stir until all of the marshmallows are entirely combined and mostly melted. At this point, add in the Cocoa Krispies, 2 cups at a time, and lightly stir until combined. Continue to add the Rice Krispies until everything is evenly combined.
- Pour the mixture into the 9×13 pan. Lightly wet your hands and gently push into the pan to the edges. You don't want to crush it, so really be gentle with it!
- Add the chocolate chips to a heat proof bowl and microwave for 30 seconds. Stir and repeat until completely melted. Once it's ready, set aside for 3 minutes to chill down to room temperature. Using a spoon, drizzle chocolate onto the treats or dip. Sprinkle on mini chocolate chips and enjoy!
