Cadbury Egg Cookie Bars

These Cadbury Egg Bars are a chewy chocolate chip lover's dream! Dense and fudgey cookie bars are dotted with chocolate chips and Cadbury Eggs, and topped with the prettiest robin's egg frosting.

Ingredients

For the cookie bars:

  • ¾ cup butter melted. I prefer salted but you can use unsalted if you prefer!
  • 1 cup light brown sugar
  • cup granulated sugar
  • 1 tbsp vanilla extract
  • 2 eggs room temperature
  • 2 cups all-purpose flour
  • 1 tbsp corn starch
  • ½ tsp baking soda
  • ½ tsp salt
  • cup semi-sweet chocolate chips
  • 1 cup roughly chopped Cadbury Eggs

For the frosting:

  • ¾ cup butter room temperature. I prefer salted but you can use unsalted if you prefer!
  • 3-4 cups powdered sugar
  • 1 tsp vanilla extract
  • 2-3 tbsp milk room temperature
  • ¼ tsp salt
  • blue food dye

For garnish:

  • 1 tbsp cocoa powder
  • 1 tbsp warm water
  • 1 cup roughly chopped Cadbury Eggs

Instructions

For the cookie bars:

  • Preheat the oven to 350°. Grease and line a metal 9×13 pan with parchment paper. In the bowl of a stand mixer combine the melted butter, brown and granulated sugar. Mix until combined. Add in vanilla and eggs, and mix until incorporated.
  • While the mixer is on low add in the flour, salt, corn starch and baking soda. Mix until just combined. Fold in the chocolate chips and Cadbury Eggs. Scoop batter into the prepared pan and use a spatula to make sure the dough is evenly spread out. Bake or 22-25 minutes, or until the edges are golden brown. Remove from the oven and allow to cool completely before frosting.

For the frosting:

  • In the bowl of a stand mixer beat together the butter and powdered sugar for 2 minutes until smooth. Add in the vanilla, salt and 2 tablespoons of milk and beat until smooth. Add in additional milk if necessary to get the consistency you prefer. Once smooth, if you're dying the frosting add in 1-2 drops of blue food coloring. Mix until evenly distributed.

For the garnish:

  • Make this right before frosting the cookie bars. In a small bowl combine warm water and cocoa powder. Whisk until combined and set aside until needed.

To decorate:

  • Place the cookie bars on a surface you don't mind cleaning (the speckling can be a little messy!) Once the cookie bars are completely cool, spread the frosting evenly on top. Dip the tip of a dry pastry brush into the water and cocoa mixture and shake off any excess. Pull the bristles back, point at the cookie bars and slowly release. Repeat as many times as you' like to create the pattern. Sprinkle the roughly chopped Cadbury eggs on top. Slice and serve!
