Peanut Butter Swirl Brownies

Ingredients

For the brownies:

  • 1 ½ sticks unsalted butter, melted ¾ cup
  • 2 tbsp vegetable oil
  • 1 ¼ cup light brown sugar
  • ¾ cup granulated sugar
  • 1 tsp instant espresso powder
  • 1 tbsp vanilla extract
  • 3 eggs room temperature
  • 1 egg yolk
  • 1 cup cocoa powder
  • 1 cup all-purpose flour
  • 1 tsp kosher salt
  • 1 cup Nestle Toll House Milk Chocolate & Peanut Butter Flavored morsels

For the peanut butter swirl:

  • ½ cup creamy peanut butter
  • 2 tbsp butter, melted
  • 2 tbsp powdered sugar

Instructions

For the brownies:

  • Preheat the oven to 350°, line an 8x8 baking dish with parchment paper or spray with nonstick and set aside. In a large bowl combine melted butter, oil, granulated and light brown sugar and vanilla extract. Beat until combined, about 1 minute. Add eggs and egg yolk and whisk for another minute.
  • To that bowl add flour, cocoa and salt. Slowly mix to incorporate all of the ingredients. The batter will be really thick! Stir in peanut butter morsels.
  • Pour batter into the prepared pan and smooth the top to make sure the batter is even.

For the peanut butter swirl:

  • In a microwave safe bowl, combine the peanut butter and butter. Melt for 30 seconds. Stir in the powdered sugar and whisk until there are no lumps.
  • Scoop spoonfuls onto the top of the brownies and then swirl. Bake for 30-35 minutes, or until the edges are set. Insert a toothpick and if it comes out with crumbs and not a wet batter, then the brownies are done!
  • Remove from the oven and cool entirely on a wire rack, about 1 hour. Cut into squares and serve!
