So something exciting happened to me… I partnered with Nestle Toll House to produce some recipes with their chocolate chips! When I sat down to brainstorm what to make, I knew I wanted to put a twist on a classic. One classic that I’d almost given up hope on was a good chocolate brownie. I’m not a fan of cakey brownies and when I eat them I always find myself feeling disappointed and wanting more: more chocolate, more fudge and more flavor. I thought the Milk Chocolate & Peanut Butter morsels would be the perfect flavor addition and man, did these turn out delicious! These Peanut Butter Swirl Brownies are a must in your dessert repertoire and I can’t wait for you to try them!
If you aren’t a fan of fudgy brownies then stop here…. seriously these are the fudgiest brownies you will ever have! Several elements make these brownies so delicious, including combining both melted butter and oil and both brown and granulated sugar. I also add a teaspoon of instant espresso powder to help elevate that chocolate flavor and cut some of the sweetness. This ingredient isn’t mandatory, but it really helps to punch up the flavor!
Recipe Tips:
- Cocoa vs. melted butter: In this recipe I use cocoa powder. In my experience I’ve found that it gives a better, bolder chocolate flavor. The batter will be very thick!
- Butter and vegetable oil: To obtain that ooey, gooey bite I combine both melted butter and vegetable oil together. This gives you a dense, decadent brownie which creates the moist texture.
- Peanut butter swirl: For my first attempt I scooped on low fat peanut butter and it was to thick to create the swirling effect. Use full fat peanut butter and combine with a little powdered sugar and melted butter. This will allow you to easily swirl into the thick batter.
- Nestle Toll House morsels: The Milk Chocolate & Peanut Butter morsels really take this dessert to the next level! If you can’t find them in stores, you can easily order them online!
I’m not normally a huge fan of peanut butter and chocolate together, but these brownies have me convinced otherwise 🙂 You could also swirl in Nutella or marshmallow fluff and switch up the flavor. Anyway you swirl it, these brownies are some of the best you’ll ever have, just trust me and give the recipe a try!!
Peanut Butter Swirl Brownies
Ingredients
For the brownies:
- 1 ½ sticks unsalted butter, melted ¾ cup
- 2 tbsp vegetable oil
- 1 ¼ cup light brown sugar
- ¾ cup granulated sugar
- 1 tsp instant espresso powder
- 1 tbsp vanilla extract
- 3 eggs room temperature
- 1 egg yolk
- 1 cup cocoa powder
- 1 cup all-purpose flour
- 1 tsp kosher salt
- 1 cup Nestle Toll House Milk Chocolate & Peanut Butter Flavored morsels
For the peanut butter swirl:
- ½ cup creamy peanut butter
- 2 tbsp butter, melted
- 2 tbsp powdered sugar
Instructions
For the brownies:
- Preheat the oven to 350°, line an 8×8 baking dish with parchment paper or spray with nonstick and set aside. In a large bowl combine melted butter, oil, granulated and light brown sugar and vanilla extract. Beat until combined, about 1 minute. Add eggs and egg yolk and whisk for another minute.
- To that bowl add flour, cocoa and salt. Slowly mix to incorporate all of the ingredients. The batter will be really thick! Stir in peanut butter morsels.
- Pour batter into the prepared pan and smooth the top to make sure the batter is even.
For the peanut butter swirl:
- In a microwave safe bowl, combine the peanut butter and butter. Melt for 30 seconds. Stir in the powdered sugar and whisk until there are no lumps.
- Scoop spoonfuls onto the top of the brownies and then swirl. Bake for 30-35 minutes, or until the edges are set. Insert a toothpick and if it comes out with crumbs and not a wet batter, then the brownies are done!
- Remove from the oven and cool entirely on a wire rack, about 1 hour. Cut into squares and serve!
