Today is National S’mores Day and if you’re like 98% of the population, you didn’t realize it. No worries, you can still celebrate by making these easy Brown Butter S’mores Rice Krispie Treats 🙂 This recipe is based off of my original Brown Butter Rice Krispie Treats but I substituted in the classic s’mores ingredients: Graham crackers, milk chocolate and extra marshmallows. They come together in under 15 minutes and are perfect for summertime celebrations!
Recipe tips:
This recipe is really, really easy but there are a few things I found out when testing these treats that I shared below!
- Graham crackers: I like to use the classic Graham crackers, but you can use any other kind you like! You will need about 3 cups of chopped crackers, which is about 1 1/2 sleeves. I like to chop them into 1/2 inch squares but use all the crumbs (this will enhanced the flavor). Don’t worry if the crackers are misshaped!
- Marshmallows: 30 ounces of marshmallows sounds like a lot, because it is! 20 ounces will be used to melt and bind the Rice Krispie Treat. The extra 10 ounces is added after all of the dry ingredients to give you bites of marshmallow.
- Chocolate: One of the issues I ran into was mixing in the chocolate chips too early and they melted everywhere. This didn’t affect the taste, but the presentation was pretty messy. I discovered that if I add in the chocolate chips in the very end they don’t smear as much! I even let the mixture cool a bit before stirring them in.
- Toppings: I always save some of the crackers, extra marshmallows and chocolate chips to sprinkle on top. Don’t worry about pushing them down into the treats because when you drizzle over the melted chocolate it will seal them right in! I prefer to use Ghirardelli chocolate, but you can use any kind you like!
Anytime I can go to my pantry and create an amazing dessert in under 20 minutes, I am a happy lady. I had a blast combining these classic flavors with one of my favorite desserts as a kid and I hope you enjoy them too!
Brown Butter S’mores Rice Krispie Treats
Ingredients
- 1 cup salted butter
- 2 tsp vanilla extract
- 30 oz mini marshmallows
- 7 cups Rice Krispies
- 3 cups Graham crackers, chopped
- 1 cup Ghirardelli milk chocolate chips
- 12 Ghirardelli milk chocolate squares
Instructions
- In a large pot melt and brown the butter. Constantly stir the butter until it melts and starts to turn brown and give off a nutty aroma. This will take 3-5 minutes. When it starts to brown, immediately remove from the heat. Stir in 2 teaspoons of vanilla extract.
- Using a rubber spatula, stir in 20 ounces of marshmallows and stir until completely melted. once melted, stir in Rice Krispies, 2 cups at a time, until combined. Dice up Graham crackers into ½ inch pieces or smaller and stir into the mix.
- At this point I let the mixture cool for about 5 minutes while I line a 9×13 inch baking dis with parchment paper. You can also spray with nonstick cooking spray. Melt 4 ounces of chocolate in the microwave, 30 seconds at a time and stirring in between, until completely melted. Set aside.
- Stir in the rest of the mini marshmallows until just combined, you don't want these to melt as much! Finally stir in the chocolate chips and pour into the pan. Use parchment paper to press down into the pan, or spray your hands with nonstick cooking spray.
- Lift the Rice Krispies out of the pan (if you are using parchment, if not, you can leave in the pan) and drizzle the melted chocolate over top. Cut into 12 even treats and serve!
